Shrimp And Feta Cheese With Mostaccioli
- 1 1/2 lb. medium shrimp, peeled and deveined
- 2 Tbsp. lemon juice
- 6 green onions, chopped
- 1 clove garlic, peeled and chopped
- 2 Tbsp. olive oil
- 4 small ripe tomatoes, peeled and chopped
- 1/2 c. dry white wine
- 1 tsp. salt
- 1/4 tsp. each: pepper and basil
- 2 Tbsp. fresh parsley, chopped
- 3/4 c. cubed Feta cheese
- 1 (16 oz.) pkg. mostaccioli or other short pasta
- Wash and pat shrimp dry.
- Sprinkle with lemon juice.
- Saute green onions and garlic in oil in a large skillet until tender, about 3 minutes.
- Stir in chopped tomatoes, wine, salt, pepper, basil and 1 tablespoon parsley.
- Lower heat; simmer, uncovered, for 15 minutes or until mixture thickens slightly; stir in shrimp and lemon juice; cook over medium heat just until shrimp turn pink and feel firm, about 5 minutes.
- Remove from heat; add cheese and sprinkle with remaining parsley.
