Sweet Story Cake
- 2 1/2 c. sifted all-purpose flour
- 1 1/2 c. sugar
- 3 1/2 tsp. baking powder
- 1 tsp. salt
- 3/4 c. milk
- 1 tsp. vanilla
- 1/2 c. walnuts, very finely chopped
- 4 egg whites
- 18 maraschino cherries, well drained and chopped fine
- 1/2 c. shortening
- 1/4 c. maraschino cherry juice
- 2 tsp. almond extract
- Sift dry ingredients into a large mixing bowl.
- Cut in shortening.
- Combine milk and cherry juice, then add 3/4 cup (save balance for later).
- Add flavorings.
- Beat 2 minutes on low speed, or 200 strokes by hand.
- Add remaining liquids and egg whites. Beat 2 minutes more.
- Blend in nuts and cherries.
- Bake in 2 layer pans in a 375u0b0 oven for 20 to 25 minutes.
- Frost with cherry frosting mix.
