Gator Chowder
- 1/4 cup bacon grease
- 1/4 cup clarified butter
- 1/2 cup diced peeled potato
- 1/2 cup diced celery
- 1/3 cup diced red bell pepper
- 1/3 cup diced onion
- 1 teaspoon chopped garlic
- 1 teaspoon thyme
- 1 teaspoon seasoning salt
- fresh ground black pepper
- 3/4 cup all-purpose flour
- 4 -5 ounces port wine
- 2 quarts water
- 1/4 cup lobster base
- 4 ounces tomato sauce
- 1 lb alligator meat (trimmed and cubed)
- hot sauce, to taste
- In large sauce pan, grease and butter on medium.
- Add potatoes and celery.
- Cook about 3 minutes.
- Add all remaining veggies, including garlic.
- Cook 3 minutes.
- Add seasonings and flour.
- Cook for about 3 minutes (do not cook on high-butter and grease will turn brown).
- Keep at Medium.
- Add wine, water, and lobster base.
- Cook 3 more minutes.
- Add alligator meat.
- Cook for 5 minutes only.
- Do not overcook.
