One Dish Village Chicken
- 4 to 6 skinless, boneless chicken breasts
- 2 standard size pkg. chicken flavored rice mix or 2 pkg. broccoli rice au gratin
- 1 pkg. sliced low-fat, low sodium Swiss or Alpine Lace cheese
- 1/2 to 3/4 c. Italian seasoned bread crumbs
- 1 few pats butter (optional)
- Cook the rice as directed on package, but stop cooking 3 minutes earlier than instructed so rice mixture will not become dry.
- Spread the rice on the bottom of a lightly oiled 9 x 13-inch baking pan.
- Place the chicken breasts on top of the rice.
- Cover chicken with cheese, then sprinkle with bread crumbs.
- Bake in a 325u0b0 oven for 25 minutes or until chicken is done and bread crumbs are slightly brown and crisp.
- If desired, melted butter may be added part-way through the baking process to add crispness to the bread crumbs.
- Serves 4 to 6.
