Doughnuts
- 1/4 c. warm water
- 1 pkg. dry yeast
- 1/4 c. shortening
- 1 tsp. salt
- 1 c. scalded milk
- 1/4 c. sugar
- 2 eggs, well beaten
- 3/4 c. mashed potatoes (instant can be used)
- 6 c. plain flour
- Dissolve yeast in warm water.
- In large mixing bowl, combine hot milk, shortening, sugar and salt.
- Cool to lukewarm.
- Mix eggs and mashed potatoes into yeast mixture.
- Add flour and stir. Knead on lightly floured surface for 10 minutes.
- Place in greased bowl, turning once to grease top.
- Cover and let rise until doubled in bulk, about 1 hour.
- Roll dough out until about 1/2-inch thick.
- Cut with floured doughnut cutter.
- Place on lightly floured surface, cover and let double in bulk.
- Cook in deep hot oil, turning once, each side being golden brown.
