Doughnuts

  1. Dissolve yeast in warm water.
  2. In large mixing bowl, combine hot milk, shortening, sugar and salt.
  3. Cool to lukewarm.
  4. Mix eggs and mashed potatoes into yeast mixture.
  5. Add flour and stir. Knead on lightly floured surface for 10 minutes.
  6. Place in greased bowl, turning once to grease top.
  7. Cover and let rise until doubled in bulk, about 1 hour.
  8. Roll dough out until about 1/2-inch thick.
  9. Cut with floured doughnut cutter.
  10. Place on lightly floured surface, cover and let double in bulk.
  11. Cook in deep hot oil, turning once, each side being golden brown.
