Chocolate Cheesecake
- 1 1/2 c. vanilla wafer crumbs
- 6 Tbsp. butter, melted
- 3 Tbsp. sugar
- 24 oz. cream cheese
- 2 c. sugar
- 1 tsp. vanilla
- 1/2 tsp. rum flavoring
- 3 eggs
- 3 sq. unsweetened chocolate, melted
- 6 oz. chocolate chips
- 10 oz. sour cream
- Mix wafer crumbs, butter and 3 tablespoons sugar together and pat in bottom of 9 x 13-inch pan.
- Beat cream cheese and 1 1/2 cups sugar together on high until creamy.
- Add the vanilla and rum.
- Blend well.
- Add eggs, one at a time, and the melted chocolate.
- After well blended, add the chocolate chips.
- Pour over wafer crumb crust.
- Bake 40 minutes at 350u0b0 until top cracks. Let cool 10 minutes.
- Mix sour cream with 1/2 cup sugar and pour over top of cake, covering completely.
- Bake 10 minutes at 350u0b0. Refrigerate for at least 30 minutes before serving.
- Decorate by drizzling chocolate syrup over top.
- Garnish with strawberries or raspberries.
