Snow Peas With Water Chestnuts
- 1 Tbsp. salad oil or bacon drippings
- 1 can (5 oz.) water chestnuts, drained and sliced
- 1/2 lb. fresh or 1 (10 oz.) pkg. frozen snow peas
- 1 c. water
- 1 chicken bouillon cube
- 1 Tbsp. cornstarch
- 2 Tbsp. cold water
- In a 1 1/2-quart glass casserole, heat oil 15 seconds.
- Add water chestnuts and snow peas.
- In a 1-cup glass measure, heat water 2 minutes.
- Dissolve bouillon cube and add to vegetable mixture.
- Cook vegetables, covered, 4 to 6 minutes, stirring once halfway through cooking time.
- Combine cornstarch and cold water; mix well.
- Push vegetables to one side of casserole and stir cornstarch mixture into broth.
- Stir vegetables into sauce.
- Cook 2 to 4 minutes, stirring every minute, until sauce is slightly thickened.
- Salt to taste.
- Yields 4 servings.
