Barbecued Pork Chops
- 3/4 c. each vinegar and ketchup
- 1 1/2 c. water
- 1 medium onion, chopped
- 1 garlic clove, minced
- 2 tsp. salt
- 1/2 tsp. pepper
- 1 Tbsp. Worcestershire
- 1/4 tsp. hot pepper sauce
- 3 Tbsp. brown sugar
- 8 thick center-cut loin pork chops (about 3 lb.)
- In saucepan, mix vinegar and ketchup, water, onion, garlic, salt, pepper, Worcestershire, hot pepper sauce and brown sugar. Simmer, uncovered, for 20 minutes, stirring occasionally.
- Pour over pork chops in a deep bowl; cool.
- Let stand in refrigerator for several hours or overnight.
- When ready to cook, arrange chops in shallow baking dish or roasting pan.
- Add the sauce.
- Bake, uncovered, in preheated moderate oven (350u0b0) for 1 1/2 hours or until chops are tender, basting occasionally with the sauce.
- Makes 4 generous servings.
