Herbed Potato Skins

  1. Preheat the oven to 425u0b0.
  2. Remove the skins from the potatoes in large strips with a sharp knife or a vegetable peeler, including some potato with each sliced skin.
  3. Soak the skins in ice water for 15 minutes.
  4. Remove; pat very dry.
  5. Spread the pieces of skins out on a large baking sheet.
  6. Spray them with a fine mist of olive oil; toss and spray again.
  7. Bake the skins for 10 minutes; lightly spray both sides again.
  8. Bake for another 5 minutes, then sprinkle with the herbs.
  9. Return the skins to the oven; bake 5 minutes longer.
  10. The skins are done when lightly browned and crisp.
  11. Salt and pepper; serve immediately with malt vinegar or lemon wedges on the side.
  12. Serves 4.
