Buffalo Roast Chicken

  1. Preheat oven to 350 degrees.
  2. Sprinkle chicken with salt and paprika. Place on rack in a roasting pan.
  3. Chicken should roast for 2 to 2 1/2 hours until a meat thermometer registers 180 degrees when inserted in the thickest part of the thigh. Avoid touching the thigh bone when checking the temperature.
  4. While chicken is cooking, combine the butter, hot pepper sauce, vinegar, garlic powder, and cayenne in a small bowl.
  5. Brush this mixture over the chicken several times during the last 20 minutes of cooking.
  6. Let the chicken sit 10 minutes before carving.
