Pumpkin-Mincemeat Bread(Recipe Created By Doris.)
- 3 c. sugar
- 4 eggs
- 1 c. vegetable oil (Wesson)
- 1 large can pumpkin
- 2/3 c. water
- 9 oz. box mincemeat (or use half 28 oz. size jar ready mix and omit the water)
- 1 c. raisins
- 3 1/2 c. white flour
- 2 tsp. cinnamon
- 2 tsp. nutmeg
- 2 tsp. baking soda
- 1 tsp. salt
- Mix the sugar, eggs, oil and pumpkin first in a large bowl. Mix in another bowl the flour, cinnamon, nutmeg, baking soda and salt.
- In a pan, mix the water and mincemeat.
- Bring to a boil. Add the raisins.
- Combine the first two mixtures and add mincemeat.
- Grease and flour five 1 pound coffee cans. Fill half full.
- Bake at 325u0b0 for 1 hour. Cool completely and shake just enough to slice each piece. Cover can with the plastic lid to ensure freshness.
- Freeze in cans, if needed.
- Makes nice gifts. Just wrap can in foil and add bow!
