Eskimo Pie(A Special Dessert)
- 1 envelope plain gelatin
- 1/4 c. water
- 3 egg yolks, slightly beaten
- 3 egg whites, beaten stiff
- 3/4 c. sugar
- 1 1/2 c. milk
- 1/4 tsp. salt
- 1 tsp. vanilla
- 1 c. whipped cream, whipped
- 7 to 8 oz. chocolate bar (large), grated
- In 1/4 cup water, soften gelatin; mix egg yolks with sugar, milk, salt and vanilla in top of a double boiler.
- Cook slowly until thick and mixture coats a spoon.
- Add softened gelatin and stir until well mixed.
- Cool.
- When partially thickened, fold in stiffly, beaten egg whites and then thick whipped cream.
- Sprinkle 1/2 grated chocolate over bottom of 11 x 6-inch pan.
- Cover with gelatin mixture.
- Top with rest of grated chocolate.
- Cover with waxed paper and refrigerate overnight.
