Fajitas
- 3 lb. round steak or chicken or combination of both
- 1 green pepper
- 1 red pepper
- 1 onion
- 2 tsp. ground coriander
- 1/2 tsp. cumin
- 1/4 tsp. cayenne pepper
- 4 Tbsp. lemon juice
- 2 Tbsp. vinegar
- 1/2 c. olive oil
- 2 cloves garlic, crushed
- 2 bay leaves
- salt and pepper to taste
- Cut meat, onion and peppers into thin strips.
- Combine remaining ingredients and add meat, onion and peppers.
- Marinate in refrigerator for 24 hours.
- Take meat strips out of marinade with tongs.
- Grill or broil meat slowly.
- Drain marinade and saute peppers and onion in 1 ounce olive oil until crisp-tender.
- Serve with 10-inch flour tortillas, sour cream, shredded cheese and picante sauce.
