Broccoli With Lemon And Onions
- 1 to 1 1/2 lb. fresh broccoli, chopped or 1 (8 oz.) pkg. frozen broccoli spears
- 1/2 tsp. zest of lemon
- dash of pepper
- 1 small onion, thinly sliced
- 2 Tbsp. butter or margarine
- 1 1/2 tsp. lemon juice
- 1/8 tsp. salt
- Toasted Almonds
- Microwave fresh broccoli pieces on High for 8 to 10 minutes in a 2-quart casserole with 1/2 cup of water.
- Cover.
- Stir after half the time.
- Microwave frozen broccoli spears on High for 8 to 12 minutes in a 2-quart casserole with 1/2 cup of water.
- Cover. Stir after half the time.
- Combine onion, separated into slices, and butter in small dish.
- Microwave on High about 2 1/2 to 5 minutes or until tender.
- Stir in lemon juice, lemon peel, salt and pepper.
- Drain broccoli.
- Spoon lemon butter mixture over top. Sprinkle with Toasted Almonds.
- Serves 4.
