Christmas Potatoes

  1. Peel and cut potatoes into 1/4-inch slices to measure 8 cups. Combine potato slices, onions and 1/2 teaspoon salt in a large Dutch oven.
  2. Add water to cover.
  3. Bring to a boil; cover, reduce heat and cook for 5 minutes.
  4. Drain and set aside.
  5. Melt butter in a heavy saucepan over low heat.
  6. Add flour; stir until smooth. Cook 1 minute, stirring constantly.
  7. Gradually add milk; cook over medium heat, stirring constantly, until mixture is thickened and bubbly.
  8. Stir in 3/4 teaspoon salt and the next 3 ingredients. Spoon potato mixture into a lightly greased 12 x 8 x 2-inch baking dish.
  9. Pour sauce over potato mixture.
  10. Bake at 375u0b0 for 40 to 50 minutes.
  11. Yields 8 servings.
