Bubble Bread

  1. Crumble yeast into water.
  2. Place milk, sugar, salt and egg in mixing bowl.
  3. Blend.
  4. Add 2 cups flour and beat until bubbles form on surface.
  5. Add melted shortening and about half remaining flour. Mix in additional flour to form soft dough.
  6. Turn dough out onto a floured board and knead dough until it is smooth, so it is elastic and can be easily handled.
  7. Press dough into a lightly greased bowl; turn dough over so greased side is up.
  8. Cover and allow to rise to double in bulk.
  9. Knead down and divide into 18 portions. Shape into balls; lightly butter and coat with sugar-cinnamon mixture (1 cup sugar and 1 teaspoon cinnamon).
