Summer Pasta Salad
- 8 oz. cooked bow tie noodles
- 2 cans mandarin orange sections, drained
- 1 large apple, cored and sliced
- 2 celery stalks, chopped
- 3 c. cooked chicken, cut in bite size pieces
- 1 c. mayonnaise
- 2 Tbsp. whipping cream (not whipped)
- 1 Tbsp. sugar
- 1 head romaine lettuce leaves (use more if needed)
- 1/2 c. almonds, sliced and toasted
- In a large bowl, combine the noodles, oranges, apple, celery and chicken.
- In small bowl, mix the mayonnaise, cream, lemon juice and sugar to make the dressing.
- Combine dressing with other ingredients.
- Toss lightly so all pieces are coated; refrigerate 1 hour.
- Toast almonds in a small pan in a 300u0b0 oven for 10 minutes, or until they just begin to turn brown.
- Set aside.
- Serve salad on lettuce leaves; top with the toasted almonds.
- Makes 6 to 8 servings.
