Candy Apple Pie
- 1 3/4 c. unsweetened apple juice, divided
- 1/3 c. cinnamon candies
- 1/4 tsp. red food coloring
- 1/2 tsp. vanilla extract
- 4 Granny Smith or other tart cooking apples, cored and sliced
- 3 Tbsp. cornstarch
- 1 purchased 9-inch graham cracker pie crust
- 1 1/2 c. frozen whipped topping, thawed
- 1/2 ground cinnamon
- 1 Tbsp. lemon juice
- 2 Tbsp. butter or margarine
- In a large saucepan, combine 1 1/2 cups apple juice, candies, food coloring, vanilla extract, lemon juice and apples.
- Bring to a boil, then simmer just until apples are tender, about 10 to 15 minutes, stirring frequently.
- Combine remaining 1/4 cup juice and cornstarch.
- Stir into apple mixture and continue to cook until thickened, about 2 minutes.
- Then cook for another 2 to 3 minutes; add butter.
- Remove from heat; cool to room temperature.
- Spread apple filling over bottom of pie crust.
- Chill for several hours or until holds its shape.
- Before serving, combine whipped topping and cinnamon.
- Top each slice with a dollop of the mixture. Yield:
- 6 to 8 servings.
