Marla Gibb'S Carrot Cake

  1. Mix together the first six (6) ingredients.
  2. Add oil& eggs& mix well.
  3. Fold in the carrots, pineapple and pecans.
  4. Pour into greased and floured 9x13x2" pan.
  5. Bake@ 350 degrees for 35 to 40 minutes or until cake pulls slightly away from the edge of pan.
  6. Cool 10 minutes; remove cake from pan.
  7. Cool on wire rack.
  8. Frosting:
  9. Beat together the cream cheese, butter and vanilla until light and fluffy.
  10. Gradually add powdered sugar.
  11. Beat until smooth.
  12. Spread top of one layer with 1/2 of cheesemixture.
  13. Place second layer on top and spread with frosting.
