Sunday Brunch Frittata
- 5 slices bacon
- 1 onion, chopped finely
- 1 lb. fresh spinach, stemmed and chopped
- 2 eggs
- 3 egg whites
- 2 cloves garlic, minced
- 4 Tbsp. grated Parmesan cheese
- 1/4 c. dry white wine
- 1/2 tsp. coarse ground black pepper
- dash of salt
- 1 tsp. olive oil
- Heat bacon at medium heat in heavy saucepan. Add garlic and onion and cook under low heat until it browns. Add spinach and cook until it wilts. Combine eggs in a large bowl; stir well. Add wine, salt, pepper and 2 tablespoons cheese. Add spinach and bacon mixture. Heat oil in a medium nonstick skillet over low heat. Add egg mixture and cook 15 minutes or until set (DO NOT STIR). Sprinkle top with remaining Parmesan cheese. Broil for 3 minutes until top is set.
