Banana Bran Muffins With Lindt Chocolate Inside
- 1 1/2 cups bran flakes
- 1 cup mashed banana
- 1/2 cup milk
- 1 lightly beaten egg
- 3 tablespoons corn oil
- 1 cup all-purpose flour
- 1/4 cup sugar
- 2 teaspoons baking powder
- 1/4 teaspoon baking soda
- 1/8 teaspoon ground nutmeg
- 1 piece lindt chili chocolate
- Preheat oven to 400 degrees F. Paper line 12 (2-1/2 inch) muffin cups. Combine egg, oil, milk, mashed banana, and crushed bran cereal. Mix well and let stand for five minutes. Combine flour, sugar, baking powder, baking soda and nutmeg in a separate bowl. Add cereal banana mixture all at once to flour mixture, stirring just until moistened. Divide evenly among the muffin cups, making sure that the chocolate is covered by batter. Bake 20 to 25 minutes at 400 degrees F or until tester inserted in center comes out clean.
- Any dark chocolate will do, but my favorite is Lindt. I break the slices in half.
