Banana-Nut Bread(Twix Cake And Bread)
- 1 c. sugar
- 1/2 tsp. salt
- 1/2 c. soft butter or margarine
- 1 c. (3 to 4) mashed bananas
- 1/2 c. buttermilk or 1 1/2 tsp. vinegar with enough milk to make 1/2 c. liquid
- 2 1/2 c. all-purpose flour
- 1 tsp. baking powder
- 1 1/4 tsp. baking soda
- 1 c. chopped nuts
- 1/4 tsp. nutmeg
- 2 eggs
- Cream sugar, salt and butter thoroughly in mixing bowl.
- Beat eggs into mixture, one at a time, until light and fluffy.
- Sift together flour, baking powder, soda and nutmeg.
- Combine bananas and milk.
- Add parts of dry and liquid ingredients alternately to creamed ingredients, blending well after each addition.
- Add nuts; mix briefly.
- Turn into 9 x 5-inch loaf pan.
- Bake at 350u0b0 for 60 to 70 minutes.
- Turn out on cooling rack; wrap in plastic or foil when cool.
