Low-Fat Prune Bread
- 3/4 c. prune puree
- 3/4 c. prune juice
- 2 tsp. grated orange peel
- 1 c. toasted wheat germ
- 3/4 c. whole wheat flour
- 1/2 c. all-purpose flour
- 1/2 c. chopped pecans
- 2/3 c. packed brown sugar
- 1 tsp. baking powder
- 1/2 tsp. baking soda
- 1/2 tsp. salt
- 2 egg whites, lightly beaten
- Preheat oven to 350u0b0.
- Grease loaf pan and dust with flour.
- In saucepan, mix puree, juice and orange peel.
- Bring just to boiling and remove from heat.
- In large bowl, combine dry ingredients and blend.
- Add prune mixture.
- Fold in egg whites.
- Add pecans. Spread in loaf pan.
- Bake about 50 minutes.
- Cool in pan 10 minutes, then turn out on rack to cool completely.
