Eggplant In Garlic Sauce

  1. Cut eggplants to sticks.
  2. Sprinkle with salt and squeeze out water.
  3. Heat wok and stir fry garlic in oil 30 seconds.
  4. Add the ginger, stir fry till fragrant.
  5. Dump in ground pork, sautetill no longer pink.
  6. Add in eggplants and green onions.
  7. Pour in stock, chili garlic, hoisin, soy, sherry, sesame oil.
  8. Simmer awhile till flavor incorporates.
  9. Serve hot with rice.
