Cauliflower Salad Bowl
- 4 c. thinly sliced cauliflower
- 1 c. pitted, coarsely chopped black olives
- 1/2 c. chopped pimento
- 2/3 c. chopped green bell pepper
- 1/2 c. chopped onion
- 1/2 c. vegetable oil
- 3 Tbsp. lemon juice
- 3 Tbsp. red or white vinegar
- 2 tsp. salt
- 1/4 tsp. black pepper
- 1/2 tsp. granulated sugar
- In a large bowl, combine cauliflower, olives, green pepper, pimento and onion.
- Mix well.
- In another mixing bowl, combine oil, lemon juice, vinegar, salt, pepper and sugar.
- Mix well. Pour oil mixture over vegetable mixture.
- Toss to coat vegetables. Refrigerate, covered, 4 hours or overnight.
- To serve, spoon vegetable mixture into a salad bowl lined with lettuce leaves.
