Spinach Salad With Curry Dressing
- 2 bunches spinach
- 1 red onion
- 2/3 c. oil
- 1/4 c. wine vinegar
- 2 Tbsp. white wine
- 1 tsp. soy sauce
- 1 tsp. sugar
- 1 tsp. dry mustard
- 1/2 tsp. curry
- 1/2 tsp. salt
- pepper to taste
- crumbled bacon, sunflower seeds, chow mein noodles, raisins, peanuts and chopped egg (garnish)
- Wash spinach; pinch off leaves and discard stems.
- Pat the leaves dry on paper towels and wrap in towels and refrigerate until ready to use.
- Slice onion in rings and separate.
- Combine the oil, vinegar, wine, soy sauce, sugar, mustard, curry powder, salt and pepper in a jar with a tight fitting lid.
- Shake until mixed.
- The dressing can be made ahead.
- Tear the spinach into bite size pieces; add onion and any other garnishes desired.
- Toss with 3 or 4 tablespoons of dressing.
- Enjoy!
