Stir-Fry Chicken Cacciatore
- 1 whole chicken breast, skinned and boned
- 1 red pepper, sliced
- 1 green pepper, sliced
- 2 c. sliced mushrooms
- 3 cloves garlic, minced
- 1 medium onion, sliced
- 1/3 c. olive oil
- 1 (28 oz.) can crushed tomatoes
- 1/4 tsp. black pepper
- 1 tsp. salt
- 1 1/4 tsp. oregano
- 1 lb. linguini
- Cut chicken into 1/8-inch slices.
- Heat wok or large skillet. Add oil.
- Stir-fry chicken 5 to 6 minutes or until white and firm. Remove from wok.
- Add peppers.
- Stir-fry 3 minutes.
- Add mushrooms, garlic and onions.
- Stir-fry 2 to 3 minutes.
- Add tomatoes and seasonings.
- Return chicken to wok.
- Reduce heat; cover and simmer 20 minutes.
- Serve over linguini.
