Ladyfingers

  1. Butter sides of heavy 2-quart saucepan.
  2. In it, combine sugar, corn syrup, water and salt.
  3. Cook and stir until sugar dissolves and mixture reaches boiling point.
  4. Cook to hard boil stage (250u0b0) without stirring.
  5. Remove from heat.
  6. Meanwhile, beat egg whites to soft peaks.
  7. Gradually add gelatin, beating to stiff peaks. Add vanilla and pour hot syrup slowly over egg white mixture, beating constantly on mixer at high speed until soft peaks form and mixture starts to loose its gloss.
  8. Drop by teaspoonfuls on wax paper.
