Apple Fritters
- 1 egg, slightly beaten
- 1 c. milk
- 1/4 c. melted butter or margarine
- 1/3 c. firmly packed light brown sugar
- Grated rind of 1 lemon
- 1 Tbsp. lemon juice
- 1 c. chopped unpeeled apples
- 1 tsp. vanilla extract
- 3 c. cake flour
- 2 tsp. baking powder
- 1/4 tsp. salt
- Combine egg, milk, melted butter, and brown sugar in mixing bowl.
- Mix together using a fork.
- Stir in the lemon rind, lemon juice, apples, and vanilla extract.
- Sift together the flour, baking powder and salt.
- Stir the flour mixture into the batter, using a fork or spoon, being careful not to overmix.
- Preheat oil (about an inch deep) in skillet to 350 degrees. Drop batter off the end of a tablespoon into hot oil.
- Fry to a golden brown. Turn so they will brown evenly.
- Remove from oil using a slotted spoon or tongs and place on paper towels.
- Allow to cool.
- Makes 25 to 30 fritters.
