Apple Fritters

  1. Combine egg, milk, melted butter, and brown sugar in mixing bowl.
  2. Mix together using a fork.
  3. Stir in the lemon rind, lemon juice, apples, and vanilla extract.
  4. Sift together the flour, baking powder and salt.
  5. Stir the flour mixture into the batter, using a fork or spoon, being careful not to overmix.
  6. Preheat oil (about an inch deep) in skillet to 350 degrees. Drop batter off the end of a tablespoon into hot oil.
  7. Fry to a golden brown. Turn so they will brown evenly.
  8. Remove from oil using a slotted spoon or tongs and place on paper towels.
  9. Allow to cool.
  10. Makes 25 to 30 fritters.
