Canadian Cheese Soup
- 2 Tbsp. cornstarch
- 1 lb. shredded medium sharp Cheddar
- 2 c. water
- 1 tsp. salt
- 1/4 tsp. pepper
- 1 tsp. Worcestershire
- 1 small clove minced garlic
- 1/2 c. butter
- 1 c. diced cooked cauliflower
- 1 c. sliced mushrooms
- 1/2 c. thinly sliced carrots
- 1 c. finely chopped onions
- 1 c. diced ham
- 2 c. half and half or evaporated milk
- Mix cornstarch and cheese.
- Boil water.
- Gradually add cheese, stirring over medium heat until smooth.
- Remove from heat.
- Add spices.
- Saute ham, then each vegetable separately in butter, adding each to soup.
- Heat again, adding milk until desired thickness is reached.
- Hearty enough for a whole meal!
