New Potatoes
- 30 small new potatoes
- salt and pepper to taste
- 1 1/2 c. fat free half and half
- 3 Tbsp. bacon drippings
- 2 Tbsp. butter
- 2 Tbsp. corn starch
- salt and pepper to taste
- green onions, chopped (optional)
- 2 pieces bacon, crumbled
- Scrape the peel off of the potatoes.
- Wash well.
- Cover with cold water; cover and bring to a boil.
- Cook until fork tender, approximately 15 minutes after they come to a boil.
- Add bacon drippings and butter and stir.
- Mix cornstarch with 1 cup of half and half and add to the potatoes stirring well.
- Add the rest of the half and half, salt and pepper.
- Stir frequently to keep from sticking and scorching.
- Cook until smooth and it thickens. Garnish with chopped green onions and crispy fried bacon.
