Lemon Meringue Pie(Makes One 9-Inch Pie)
- 1 1/2 c. sugar
- 1 1/2 c. water
- 1 Tbsp. butter
- 1/3 c. cornstarch
- 3 egg yolks, beaten
- 1/2 c. lemon juice
- baked 9-inch pie shell
- In a saucepan mix the sugar and cornstarch very well. Gradually stir in water.
- Cook over medium heat and stir constantly until mixture gets thick.
- Boil 1 minute.
- Stir a little of this hot mixture very slowly into the egg yolks.
- Then blend this mix into the hot mix in saucepan.
- Return to heat and boil about 1 minute more, stirring constantly until smooth and thick.
- Blend in butter.
- Stir to melt and then add lemon juice and stir well.
- Pour into baked shell.
- Cover with meringue.
- Be sure to seal meringue to crust so it doesn't shrink.
- Bake in a 400u0b0 oven for 8 to 10 minutes or until light golden brown.
