Broccoli And Ham Quiche
- pastry for 1 (10-inch) quiche pan
- 1 bunch fresh broccoli
- 1 c. cream
- 1 c. milk
- 4 eggs
- 1/2 c. chopped ham
- 3/4 c. Gruyere cheese
- 1 Tbsp. wine vinegar (white)
- salt and pepper to taste
- 1/4 c. Parmesan cheese
- Line pan with pastry and partially bake, unfilled, for 20 minutes in a 425u0b0
- oven.
- Remove stems from broccoli; cut tops in small pieces and blanch in boiling, salted water for 5 minutes. Drain, cool and chop coarsely (about 2 cups).
- Whisk together cream, milk and eggs; add broccoli, ham, cheese and wine vinegar. Season with salt and pepper.
- Pour into pastry shell and sprinkle with Parmesan cheese.
- Bake in a 375u0b0
- oven for 30 minutes until puffed and brown on top.
