Brick Cake(Sugar-Free)
- 2 c. oatmeal
- 2 c. whole wheat flour
- 2 c. cream of wheat
- 1 c. powdered skim milk
- 1 tsp. baking powder
- 1 can chopped peaches, drained
- 5 to 6 ripe bananas
- 1 c. concentrated apple juice (frozen)
- 1/2 c. oil
- 1/2 to 1 c. skim milk (just enough to give the texture of cornbread batter, moist, but not too soggy)
- cinnamon to taste (1 Tbsp.)
- raisins (1/2 to 1 c.)
- Mix all dry ingredients, then add the liquid, leaving milk for last to give the right texture.
- Add raisins.
- Pour into glass baking dishes.
- Pour 1/2 to 3/4-inches deep (any deeper and it won't cook inside).
- There should be enough to fill 2 glass dishes, depending on size.
- I use one 9 x 13-inch and one 9 x 9-inch. Preheat oven to 350u0b0 and bake until done, 30 to 40 minutes.
- (Cut into center and look to see if done.)
- Cut into squares when cooled.
