Super Spanish Rice
- 2 Tbsp butter or margarine
- 1 lb. ground beef
- 1 cup celery, chopped (use some leaves)
- 1 large onion chopped
- 1 medium green pepper diced
- 1 large clove of garlic or 1 tsp garlic powder
- 1 tsp salt
- 1/4 tsp pepper
- dash of cayenne pepper or tabasco
- 1 cup of rice
- 1 (Number 2 1/2) can (3 1/2 cups) tomatoes chopped
- 1 tsp sugar
- 1/2 lb. sharp cheddar cheese, grated
- green or red bell pepper for garnish (optional)
- black and/or green stuffed olives (optional)
- Melt the butter or margarine in a large skillet. Saute the ground beef until lightly browned and the vegetables are soft. Stir in the rice, tomatoes and sugar. When the mixture simmers, stir in the cheese, reserving a little to garnish the top. Pour into a large casserole and

- for one hour using long grain or brown rice, or 1/2 hour when using minute rice. Garnish with black and/or green stuffed olives and bell pepper strips if desired.
