Filet Of Beef With Mustard-Cream Sauce

  1. Melt butter in heavy, cast-iron skillet over medium-high heat.
  2. Add steaks and cook to desired doneness, about 4 minutes per side for rare.
  3. Add mustard, Worcestershire Sauce and shallot to skillet.
  4. Season with pepper.
  5. Add brandy and ignite.
  6. When flames subside, return to heat.
  7. (or just cook down a couple of minutes) Transfer steaks to plates.
  8. Add cream to skillet and boil until reduced to thin sauce consistency, about 2 minutes.
  9. Pour over steaks and serve.
