Zucchini Nut Bread

  1. Sift together dry ingredients, except sugar.
  2. Combine eggs, vegetable oil, sugar, zucchini and extracts in a separate bowl and beat well.
  3. Stir flour mixture into wet ingredients; mix until smooth.
  4. Add raisins, nuts and chopped dates last and stir.
  5. Pour into 9 x 5-inch loaf pans or muffin tins.
  6. Bake at 350u0b0 for about 45 minutes for loaves and 20 minutes for muffins.
