Turkey Soup(Leftover Turkey)
- 1/2 stick butter
- 1/2 c. chopped onion
- 1/2 c. chopped or shredded carrots
- 1/2 c. chopped celery
- 1 c. green chopped pepper
- 3 apples, peel and chop
- 1 qt. tomatoes or tomato juice
- 5 c. turkey stock or bouillon
- 1/3 c. flour mixed in 1/2 c. cold water
- 1/2 tsp. curry powder
- dash of nutmeg or mace
- 2 or 3 whole cloves
- salt and pepper to taste
- 1 1/2 to 2 c. cooked rice
- 1 1/2 to 2 c. (or more) cooked bite size turkey pieces
- Melt butter and saute
- onion,
- carrots and celery until celery and
- onion are limp and transparent.
- Add chopped green peppers, apples,
- tomato juice, turkey stock, flour and water mixed,
- curry powder,
- nutmeg, whole cloves, salt and pepper. Simmer until
- all vegetables
- are done.
- It can go for hours, but should simmer
- at least
- 1
- 1/2 to 2 hours on low simmer. Remove cloves and add cooked rice and turkey. Heat thoroughly. Makes 8 to 10 generous servings.
