Manicotti With Four Cheeses
- 1/2 c. butter or margarine
- 1 large onion, minced
- 1 lb. mushrooms, sliced
- 1/2 c. flour
- 4 c. milk
- 1 c. grated Parmesan cheese
- salt and pepper
- 12 manicotti shells
- 1 lb. Ricotta or cottage cheese
- 4 oz. Mozzarella cheese, diced
- 1/2 c. grated Parmesan cheese
- 1/2 c. grated Romano cheese
- 1/4 c. finely chopped walnuts
- 3 eggs
- dash of nutmeg
- In a saucepan melt butter and saute onion and mushrooms for 5 minutes.
- Stir in flour.
- Gradually stir in milk.
- Stir over low heat until sauce bubbles and thickens.
- Stir in Parmesan cheese, salt and pepper to taste.
- Set aside.
- Cook manicotti shells according to package directions.
- Drain and cover with cold water.
