Vegetable Garden Primavera(Serves 8)
- 1 (8 oz.) pkg. linguine
- 2 medium yellow summer squash or zucchini, bias sliced into 1/2-inch pieces
- 2 c. broccoli buds
- 1/2 lb. asparagus, bias sliced into 1-inch pieces
- 2 medium carrots, bias sliced into 1-inch pieces
- 1 c. light cream (half and half)
- 1 tsp. dried basil
- 1/8 tsp. pepper
- 1/2 c. freshly grated Parmesan cheese
- Cook linguine to package directions; drain.
- Meanwhile, cook the squash, broccoli, asparagus and carrots in a small amount of boiling salted water until vegetables are crisp-tender.
- Drain. In a saucepan, combine light cream, basil and pepper; bring to a gentle boil.
- Boil for 8 to 10 minutes, or until slightly thickened, stirring occasionally.
- Toss together linguine, vegetable mixture, cream mixture and Parmesan cheese.
