Chicken Breasts With Crab(Pollo Con Granchi)
- 4 whole chicken breasts, boneless
- 1/4 c. butter
- 1/4 c. olive oil
- 1 c. carrot strips
- 1 c. fresh mushrooms, sliced
- 1/4 lb. fresh asparagus, sliced
- 1/4 c. fresh parsley, chopped
- 1/4 c. white wine
- 1 tsp. salt and pepper
- 1/2 tsp. oregano
- 6 oz. crab meat, fresh or frozen king crab
- Slice chicken breasts
- into
- 8 pieces.
- Heat butter and oil in large
- skillet; add chicken pieces.
- Saute lightly over medium heat.
- Add
- carrot
- strips,
- mushrooms
- and
- asparagus slices. Cook for
- 3
- to 4 minutes.
- Add remaining ingredients except crab. Continue
- cooking,
- stirring occasionally, until chicken is tender to fork,
- 10 to 15 minutes.
- Add crab last 5 minutes, tossing lightly.
- To
- serve,
- place chicken pieces on platter and spoon crab mixture on top.
- Sprinkle with parsley. Makes 4 to 6 servings.
