Italian Stallion Sandwich
- 6 (5 oz.) natural casing mild Italian sausages
- 2 Tbsp. butter
- 2 c. sliced mushrooms
- 1 c. chopped green pepper
- 1 clove garlic, minced
- 6 French rolls
- 2 c. pizza sauce
- 6 to 10 slices Mozzarella cheese
- 2 tsp. oregano
- 1/2 tsp. paprika
- Simmer sausage in water until done.
- Melt butter in skillet. Saute onion, pepper, mushrooms and garlic until tender (5 to 7 minutes).
- Split rolls.
- Divide vegetable mixture among rolls. Split cooked sausage and place on top of vegetables.
- Pour 1/3 cup sauce on each sandwich.
- Top with cheese.
- Sprinkle with oregano and paprika.
- Heat under broiler until cheese melts and begins to brown (3 to 5 minutes).
- Garnish with pickles and parsley.
