Ham And Cheese Salad
- 1 1/2 lb. baked ham, sliced 1/4-inch thick and cut into 3 x 1/4-inch sticks
- 1 1/2 lb. Gruyere cheese, sliced 1/4-inch thick and cut into 3 x 1/4-inch sticks
- 3 green onions, thinly sliced
- 2 Tbsp. chopped flat leaf parsley
- 2 Tbsp. white wine vinegar
- 2 Tbsp. Dijon-style mustard
- 1/2 tsp. salt
- 1/4 tsp. freshly ground black pepper
- pinch of cayenne pepper
- 1/2 c. extra virgin olive oil
- In a large bowl, combine ham and cheese with the green onions and parsley.
- In a small bowl, whisk the vinegar, mustard, salt, black pepper and cayenne.
- Gradually whisk in the olive oil in a thin stream.
- Pour the dressing over the ham and cheese and toss well.
- Cover and refrigerate.
- Serve at room temperature.
- Makes 8 (4 cup) servings.
