Baked Cod

  1. Preheat oven to 375u0b0.
  2. Slightly grease a 13 x 9-inch baking dish.
  3. Put fish pieces into the dish and sprinkle with lemon juice.
  4. Place carrots and potatoes between pieces and place dabs of margarine and pieces of potato over fish.
  5. Season with salt and pepper.
  6. Sprinkle cheese over all.
  7. Cover and bake 1 hour.
  8. Serve garnished with chopped parsley.
  9. Yields 4 servings.
  10. Approximate calories per serving: 330.
