Baked Cod
- 1 lb. cod fillets, cut in 2-inch sq. pieces
- 4 medium potatoes, peeled and quartered
- 4 medium carrots, scraped and cut into 2-inch pieces
- 1 Tbsp. lemon juice
- 1 Tbsp. margarine
- 1 1/2 tsp. salt
- 1/4 tsp. pepper
- 1/4 c. shredded Mozzarella cheese (made from partially skim milk)
- 1 to 2 Tbsp. chopped parsley
- Preheat oven to 375u0b0.
- Slightly grease a 13 x 9-inch baking dish.
- Put fish pieces into the dish and sprinkle with lemon juice.
- Place carrots and potatoes between pieces and place dabs of margarine and pieces of potato over fish.
- Season with salt and pepper.
- Sprinkle cheese over all.
- Cover and bake 1 hour.
- Serve garnished with chopped parsley.
- Yields 4 servings.
- Approximate calories per serving: 330.
