Lady Baltimore Cake

  1. Preheat the oven to 350 degrees. Grease and lightly flour three 9-inch cake pans. Beat the egg whites until stiff but not dry. Set aside. In a medium bowl, combine the flour, baking powder and salt.
  2. Stir to mix.
  3. In a large mixing bowl, cream together the butter and sugar, beating well.
  4. Add the vanilla and almond extracts.
  5. Mix well.
  6. Add the flour mixture to the creamed mixture alternately with the milk, starting and ending with the flour. Fold the egg whites into the batter. Spoon into prepared pans and bake for about 25 minutes or until a toothpick inserted into center of layers comes out clean. Remove from pans immediately and cool completely on racks before frosting.
