Banana-Honey Muffins
- Streusel (recipe follows)
- 3/4 c. mashed ripe bananas (about 2 medium)
- 1/2 c. milk
- 3 Tbsp. honey or packed brown sugar
- 3 Tbsp. vegetable oil
- 1 egg
- 1 1/4 c. Gold Medal all-purpose flour
- 2 1/4 tsp. baking powder
- 1/4 tsp. salt
- 1 1/4 c. slightly crushed Wheaties Honey Gold cereal (about 2 3/4 c. crushed)
- Heat oven to 400u0b0. Grease bottoms of 12 medium muffin cups, 2 1/2 x 1 1/4-inches.
- Prepare Streusel.
- Reserve.
- Mix bananas, milk, honey, oil and egg in a large bowl. Stir in flour, baking powder and salt just until flour is moistened. Stir in cereal. Fill each muffin cup about 2/3 full. Sprinkle Streusel evenly over tops. Bake about 20 minutes or until golden brown.
- Makes 1 dozen muffins.
