Microwave Curried Rice With Almonds

  1. Put onions and oil into 3-quart casserole. Cover tightly and microwave on High for 2 to 3 minutes. Wash rice briefly in a sieve under cold, running water; drain well.
  2. Add to onions in a casserole along with rest of ingredients, except almonds. Cover tightly
  3. and microwave on High for 7 minutes; stir.
  4. Cover and microwave until liquid is almost absorbed, 8 to 10 minutes longer. Stir. Cover and let stand 10 minutes.
  5. Stir again and top with almonds.
