Microwave Curried Rice With Almonds
- 1 medium onion, chopped
- 2 Tbsp. tight olive oil or butter
- 1 c. long grain rice
- 1 1/2 tsp. instant chicken bouillon
- 1/4 tsp. allspice
- 1/4 tsp. turmeric
- 1 tsp. curry powder
- dash of pepper
- 1/2 c. raisins
- 2 c. hot water
- 1/4 c. slivered, toasted almonds*
- Put onions and oil into 3-quart casserole. Cover tightly and microwave on High for 2 to 3 minutes. Wash rice briefly in a sieve under cold, running water; drain well.
- Add to onions in a casserole along with rest of ingredients, except almonds. Cover tightly
- and microwave on High for 7 minutes; stir.
- Cover and microwave until liquid is almost absorbed, 8 to 10 minutes longer. Stir. Cover and let stand 10 minutes.
- Stir again and top with almonds.
