Kathie'S Chocolate Eclair Cake
- 1 c. flour
- 1 stick butter or margarine
- 1/4 tsp. salt
- 1 c. water
- 4 eggs (room temperature)
- 2 pkg. instant vanilla pudding
- 2 1/2 c. cold milk
- 8 oz. softened cream cheese
- 12 oz. container frozen topping, thawed
- 3 oz. chocolate chips
- 2 Tbsp. margarine
- 1 c. confectioners sugar
- 3 to 4 Tbsp. milk
- Heat oven to 400u0b0.
- In saucepan, bring water and 1/2 cup butter to a boil until butter is melted. All at once, add flour and salt. Beat until mixture forms a ball and leaves sides of pan. Add eggs, one at a time, beating thoroughly after each addition. Spread mixture into parchment lined jelly roll pan (15 x 10 x 1-inch).
- Bake for 35 minutes.
- Prick bubbles with fork while hot. Cool completely.
