Peasant Potatoes

  1. In a large skillet over medium heat, melt butter.
  2. Add onion and garlic.
  3. Cook and stir 5 minutes or until onion is transparent. Stir in oregano and sausage and cook about 5 minutes more.
  4. Stir in potatoes, salt and pepper until potatoes are well coated with butter.
  5. Place mixture in slow cooker.
  6. Cover and cook on High 3 to 4 hours or on low for 6 to 8 hours, stirring every hour if possible.
  7. During last 30 minutes of cooking, add cabbage and peppers.
  8. Sprinkle with Parmesan cheese before serving.
  9. Makes 6 side dish servings or 4 main dish servings.
