Peasant Potatoes
- 4 Tbsp. unsalted butter
- 1 large sweet onion, diced
- 2 large cloves garlic, chopped
- 1 tsp. dried oregano
- 1/2 lb. smoked beef sausage, cut into 3/4 inch slices
- 6 medium potatoes, cut into 1-1/2 to 2 inch pieces
- Salt and pepper to taste
- 2 c. sliced Savoy or other cabbage
- 1 c. diced or sliced roasted red bell peppers
- 1/2 c. shaved fresh Parmesan cheese
- In a large skillet over medium heat, melt butter.
- Add onion and garlic.
- Cook and stir 5 minutes or until onion is transparent. Stir in oregano and sausage and cook about 5 minutes more.
- Stir in potatoes, salt and pepper until potatoes are well coated with butter.
- Place mixture in slow cooker.
- Cover and cook on High 3 to 4 hours or on low for 6 to 8 hours, stirring every hour if possible.
- During last 30 minutes of cooking, add cabbage and peppers.
- Sprinkle with Parmesan cheese before serving.
- Makes 6 side dish servings or 4 main dish servings.
