Green Tomato Cake
- 1 c. oil
- 2 c. sugar
- 2 c. ground green tomatoes
- 3 c. all-purpose flour
- 3 eggs, beaten
- 1 c. raisins and nuts (optional)
- 1/2 tsp. baking powder
- 1 tsp. each soda and salt
- 2 tsp. vanilla
- 1/4 tsp. cloves
- 1/4 tsp. nutmeg
- 2 1/2 tsp. cinnamon
- 4 Tbsp. oleo
- 1 1/2 c. powdered sugar
- 8 oz. cream cheese
- 1 tsp. vanilla
- Mix sugar, salt, baking powder, soda, spices (all ground).
- Mix oil, eggs, vanilla and tomatoes.
- Rub nuts and raisins in flour lightly.
- Mix all ingredients well and pour into Bundt pan and bake 1 hour at 350u0b0.
- Cream oleo and cream cheese until smooth and sugar and vanilla and mix until smooth and ice the cake.
